Kimura Sneak Peek: Ramen Bar Set to Open Its Doors July 29

Chef Michael Sohocki's much buzzed about ramen bar, Kimura, will open its doors July 29. Located inside the space occupied by the late Cakery Bakery, Kimura will seat about 30-35, eight or nine of which can squeeze into the ramen bar across the way from the door.

Dave Rizo, 25, who's worked with Sohocki since his days at The Cove will be the sous chef at Kimura. Rizo and Sohocki staged under William "Goro" Pitchford, owner of Godai Sushi Bar & Japanese Restaurant, in mid-July to learn the ins and outs of sushi making from one of the city's best.

Sohocki says he learned the speed of slicing a roll without having rice stick to the blade, how much is used for nigiri and how slicing fish in the wrong direction can mess with textures of certain fish.
