Went to @topgolfsanantonio around a month ago and have been hooked ever since. Their food is fabulous and the golf setup they have is incredible. They do a fabulous job at making sure non golfers (which are the majority of people who go) have a good time. What you see here is their Sunrise Burger - Pecanwood smoked bacon, Cheddar cheese and a fried egg. The burger was amazing and a must next time you stop by. Tostadas mañaneras: vegan chorizo tofu scramble, nopal tostada, avocado (mi amor), minced Serrano, dash of lime. Because nothing beats Mexican breakfasts 🇲🇽 #breakfastofchampions --- Soy chorizo actually tastes great. It is seasoned similarly to the meat version, so it's a flavor bomb. My mom told me a few years ago that I (unknowingly) grew up on it: she'd use it on everything from frijoles refritos to papas con chorizo. Here I sautéed minced onion for a few minutes until soft and light brown, added crumbled chorizo and browned in the same pan. I pushed onions and chorizo to edge of pan and crumbled in drained tofu, seasoned with cumin, turmeric, smoked paprika, salt, chipotle powder and sumac (any mix of seasonings work). When tofu browned a bit I scrambled it all together. Enjoy!
