Clementine, Castle Hills' Latest Restaurant, Opens This Week

After hosting several diners on a reservations-only basis last week, Clementine, the new concept by chefs John and Elise Russ is officially opening Tuesday.

Open for dinner, Tuesday through Thursday from 5 to 9 p.m. and Friday and Saturday from 5 to 10 p.m., the restaurant will feature a menu of petit dishes and platters. According to a press release, that means guests will find 'hush puppies' with labneh, pickled green tomato, honey and sumac; fried salt cod tots, and a Sideboard of ricotta cavatelli with broccoli pesto, pink peppercorns and pecans and garlicky spinach mustard greens," and entrée-style offerings such as crispy skin river trout with fresh bitter greens, soy and sesame oil and 24-hour short ribs served with roasted new potatoes and bordelaise jus.

Desserts will be created by pastry chef and co-owner Elise, and will include a "chocolate clementine crunch bar with chocolate caramel mousse, hazelnuts and clementine sherbert and cardamom donuts with coffee ice cream and candied kumquat," per the release.
