One of the city's most successful food trucks is making the jump to brick-and-mortar. After slyly announcing permanent roots located behind the truck at 7327 N. Loop 1604 W. last July, Singh's shared more news this past weekend.
A group photo was posted on the food truck's social media pages this weekend inside their new kitchen.
"Some of the Singhs crew lookin at ya from the new kitchen. NBD. Until then catch us at the trailer," said the post. Though no location was shared, from the looks of the photo, the new location will be adjacent to TBA Bar and the new location of Slackers, which is also supposed to open soon.
Eric Treviño, with Singhs, said via email that the company has "a couple of projects in the works" and timelines are still being worked out.
Until then, the news of Singhs expanding to the St. Mary's Strip area was met with positive response by the truck's followers. Opened in 2013 by Louis Singh and Treviño, the truck has built a legion of followers craving fresh Vietnamese fare, or "a mother's southern Vietnamese recipes as told by her Texan son" as Singhs puts it.
Though no updates were available at the time on either brick-and-mortar, diners can still enjoy the truck at 7327 N. Loop 1604 W.
