Noodles are making their way to San Antonio's Lone Star and Historic Gardens as Kimura opens up shop inside Freight Gallery and the upcoming Cherrity Bar.
Owned by chef Michael Sohocki, Kimura first opened in late 2013 and has been popping up at the South Flores gallery for the past several Second Saturdays with an abridged menu.
"It's been very well received by the community, it's going really good, and it's grown a little bit more each time," said Ernie Bradley, director of operations for Kimura.
For this week's launch, the menu will continue to offer two types of broth (miso and tonkotsu), two proteins (chicken or pork belly), along with noodles and the usual accoutrements of soy pickled egg, shiitake mushrooms, green onions and nori. Bowls range from $8 to $10 with optional add-ons.
The partnership bringing ramen to South Flores began early last year.
"I reached out to chef Michael [Sohocki] and started talking about it when we were finishing up renovations here," said Sergio Martinez, owner of Freight Gallery. "He had just opened the pizza place [Il Forno] and he shown had a commitment to the neighborhood."
The ramen bar will be one of two noodle extensions of Kimura with the second coming by way of the upcoming Cherrity Bar off Cherry St. Bradley says Kimura's ramen bar will operate Thursday through Saturday as a pop-up while a kitchen is finished out. He said the kitchen will open April 15.
