The mimosa is a staple on brunch menus and is a fairly simple drink, featuring Champagne or another bubbly and orange juice, but Bite pushes it to another level. The staff takes just about every sweet thing they can get their hands on, puts it on a stick, and garnishes the drink with it.
The drink, according to restaurant owner and chef Lisa Astorga, is “made with lots of Champagne and a little bit of orange juice, you know, for taste.” After pouring the main components, the garnish is created. Items that come on the skewer can vary, though the spectacular garnish will always feature Froot Loops, gummy candy, and cotton candy. Other snacks that have had the honor to accompany the drink in the past include marshmallows, cookies, Suzy-Q’s cookie sandwiches, and even cosmic brownies.
The drink was created because Astorga wanted to offer an extraordinary version of the brunch drink most brunchers request. It was launched when the Southtown eatery first implemented their brunch menu a little over a year ago.
If you want to enjoy the drink for yourself, or treat your mom to the best mimosa in Southtown, Bite still has dining times available for brunch this Sunday. Reservations are strongly encouraged. If you can’t make it in this weekend, don’t worry: while the drink is commonly ordered — and Instagrammed — during brunch, it can be ordered any time of the day for those in need of a sugar rush.
