Cocktail of the Week: Rosella at the Rand's Morning in Mexico

This year marks the fifth anniversary of the international event known as Negroni Week. The week-long event, which started in 2013, is a celebration of a classic cocktail and with every drink sold, money is raised for charities around the world. When it first launched, there were only 120 bars participating, now there are over 7,700 venues that take part in the event and nearly $1.5 million a year is raised for charity.

There are more than 53 bars in San Antonio participating in Negroni Week, some menus will feature a classic Negroni (made with 1 ounce gin, 1 ounce sweet vermouth, and 1 ounce Campari). Others get a little creative featuring frozen Negronis and other unique variations on their menu. Rosella on the Rand, is one of those bars that embraces a twist on the classic with the Morning in Mexico.

The Morning in Mexico, is a combination of Wahaka Mezcal, Campari, Caffe Del Fuego, mole bitters and a saline solution. The drink is a distinct variation on the Negroni that switches the gin out for a smoky agave spirit, and the vermouth for Fuego, a spicy coffee liqueur. The drink was perfected by former bar manager Jesse Torres. He was inspired by a “Fueg-roni," a cocktail I originally posted on Drinking In S.A. earlier in the year which featured mezcal, Campari, and Fuego. The result is a collaborative effort that plays up the original drink and turns up the savory elements of the cocktail. He kicked the drink up a notch by adding the saline and chocolate bitters, both complement the mixture, balancing it out with a little bit of salt and slight sweet chocolatey aroma. The new cocktail creates a delicious combination that hits many of the flavor profiles – bitter citrus from the Campari, sweet and spicy from the mole bitters and the Fuego, salt from the saline solution, and a bit of umami from the mezcal.

The Morning in Mexico is perfectly balanced and well crafted cocktail that is a permanent fixture on Rosella’s menu, and one of their featured concoctions for weeklong celebration. When the drink is purchased between June 4 and 10, a portion of the proceeds will go towards the Fisher House Foundation charity, which was the preferred charity for Rosella at the Rand.
