No Unicorns (or Other Animals) Died in the Making of This Colorful Sushi

Grab-and-go meals are becoming a big part of Hip Peaz Vegan Eats business plan. After ceasing hot specials at Munch On and Beyond, the vegan business is spreading their wings (and more specifically their KSOGOOD) to other parts of San Antonio and Austin.

And one of the lunch items available these days takes a different approach to sushi — sans fish.



The Unicorn sushi served by Leah Drones and Javier Balderas of Hip Peaz Vegan Eats features rice dyed with beets, turmeric and spirulina algae to score that tricolor effect. Carrots and red bell peppers are added for extra crunch, avocado for creaminess, and "crasian" shrimp, made of a medley of starches for that chewy shrimp effect, and finished off with a vegan sauce similar to a chipotle mayo. Jalapeño slices and microgreens are also added.
