“We’re excited to continue to expand Southerleigh into this neighborhood and introduce our beer to an even larger audience,” said Jeff Balfour, Southerleigh’s owner and chef. “The south side of San Antonio has been rapidly expanding, and we are thrilled to be joining this growing community at Brooks."
Originally, Southerleigh planned to supply the restaurant with beer from its original location at the Pearl's historic brewhouse. However, Balfour cooked up the idea for a second brewing site, which will supply the restaurant and handle all brewing for Southerleigh’s distribution.
The new facility will feature a 25-barrel brewing system and produce Southerleigh brews including Texas Uncommon and Gold Export Lager.
“The Brooks brewery will still have the same vibe that we’ve cultivated at the Pearl brewpub,” said Head Brewer Les Lock, who will also oversee production at both breweries.
