The bounty of midwinter gulf seafood has begun to roll into town. A few days ago, Pinch Boil House
announced the return of crawfish. Being among the first in town to get them in stock, they promptly began selling out.
Pinch serves a variety of seafood boils. In addition to crawfish, their current menu
lists shrimp, snow crab legs and mussels, which you can order with corn, potatoes and sausage. Crawfish prices fluctuate with the market, but the other boils are in the $10-$20 range.
If you prefer to boil 'em yourself, last Friday's weekly newsletter from Groomer's Seafood also alluded to the return of the cajun staple.
H-E-B will surely be soon to follow, with their own live specimens for sale and the occasional boil held just outside the store entrance.
Crawfish like to make their presence known after the cool season becomes the warm season and before the warm season becomes too hot. That sweet spot tends to be March and April
for wild caught crawfish. For farmed crawfish, the season can run from November to July
in Louisiana. The range is a bit skinnier in the Lone Star State.
For those inclined to make a pilgrimage, you've got the Austin Crawfish Festival on March 9 as well as the Lonestar Crawfish Festival at Stubb's on April 13. Fredericksburg runs a festival from May 24-26. In San Antonio, there is Bugs and Beer
in Stone Oak. Particulars for this year have yet to be announced, but last year the party was every Sunday at 2 p.m. from mid February to late April.
Last year's crawfish season had a slow start
, but it appears that this winter was mild enough to hit the ground running. Remember to twist, snap and then pinch. Only a fool neglects to slurp the head.
Cajun, Creole and Southern fares are having a bit of a moment in San Antonio. There's Cookhouse, NOLA, and Ma Harper's and other elevated southern fare like Meadow, Periphery and the newly opened Eastside Kitchenette. Even if crawfish isn't your thing, you can still catch that bontemps vibe.
