A Week's Worth of Eggless Breakfasts


This is the worst timing to coincide with National Egg Day this past June 3. With egg prices skyrocketing due to avian flu, the only people that seem unaffected by the outbreak are the vegans. Here are some ideas for traditional breakfast items with the eggs subtracted from the mix. These meals will be good on your wallet and your overall health while keeping your mornings dull-free. 

1. Chickpea Omelette

This recipe is fairly flexible from your choice of plant-based milk (almond and soy are most popular) to the multiple alternatives to eggs you can use, including "chia eggs," pureed bananas or flax seeds. Get the recipe at
