On Sunday mornings, many San Antonians cannot resist the powerful allure of barbacoa. It’s a local staple, especially paired with Big Red. Randy Garibay even wrote a song about it. Tejas Tamales and Barbacoa has been operating in Helotes for 14 years but it began in Leon Valley in 1995. Tejas specializes its offerings of what is traditionally cow head cooked in a pit dug into the ground. Tejas offers three kinds of lean barbacoa packages and one type of regular barbacoa. Each package boasts at least a dozen tortillas. The restaurant guarantees a long take-out line on Sundays.
