Elizabeth Forsythe took a minute from her Speed Rack practice time to share bubbly recipes for this Valentine’s Day, perfect for any level.
The most involved cocktail is also the simplest. These days, Forsythe is trying her hand at vinegar shrubs, which add acidity and layers of flavor to any cocktail. Her winter iteration, a cran-apple shrub, warms the soul.
1 ounce apple brandy
½ ounce cran-apple shrub
In a chilled flute combine brandy, shrub and top with Champagne.
The first is a classic take any cocktail newb could whip up to impress his/her sweetie.
Seelbach and Champagne Cocktail (Jessica Elizarraras)
Big on bourbon and bitter? Try the Seelbach, which Forsythe describes as a bubbly cocktail for dudes, named after the Kentucky four-star hotel where it was created.
1 ounce bourbon
½ ounce Pierre Ferrand Dry Curacao
7 dashes Peychaud’s bitters
7 dashers Angostura bitters
Lemon peel, twisted, for garnish
Stir bourbon, Curacao and both bitters over ice. Strain into chilled flute and top with Champagne. Garnish with lemon twist.
1 sugar cube
2-3 dashes bitters
1 ounce brandy
Lemon peel for garnish
Place sugar at the bottom of a flute. Add angostura bitters until it dissolves, add brandy and stir. Top with Champagne and garnish with lemon zest.

1 ounce mescal
1 ounce Campari
¾ ounce Cynar
a bar spoon of Benedictine herbal liqueur
Stir ingredients lightly with ice, pour into a coupe and garnish with an orange wedge.
