School starts, vacations end and summer comes to a close. Before saying goodbye to those hot sunny days, there is one bar menu that you need to check out. La Roca Cantina, just off of Broadway has a summer menu that is filled with refreshing sippers and boozy refreshments. Cucumber, grapefruit, and other seasonal favorites are featured on the menu at the swanky cocktail bar.
While they do have a menu filled with solid cocktails, the Princesa de las Flores is by far a star in the cocktail world. A combination of Gracias A Dios Mezcal, Giffard Pamplemousse, Campari, honey and egg white make for a boozy, tart, slightly sweet and, dare I say it, foamy refreshment.
The drink was created by Keith Serrano, formerly a La Roca bar staff member who has now returned to the Edison Experiment on the North Side. Serrano has been a fan of creating unique cocktails that are well balanced with a mezcal base.
Well-balanced, it is. The mezcal adds a nice smoke to contrast the sweetness found in the liqueur and the honey. The Campari adds a nice bitter layer to the drink, while the foam that is created from the egg white gives the drink a light body and taste that is perfect for the end of summer.
