Local chef makes good

Jason Dady, chef and owner of The Lodge Restaurant of Castle Hills, 1746 Lockhill-Selma, will be the featured chef at the James Beard House in New York City on June 29.

The House was started by Julia Child after James Beard's death in 1985 to preserve Beard's mentoring of emerging culinary talents. Visiting chefs have included such culinary luminaries as Jody Adams, Daniel Boulud, and Charlie Trotter. San Antonio's Scott Cohen was once a guest. Dinners at the Beard House offer the opportunity to discuss food with great chefs, wine professionals, journalists, and cookbook authors.

Dady's menu for the evening will offer at least one Texas dish or food with each course. In the first course, the great state will be represented in a lobster bisque with curried Texas Jumbo Lump Crab. The second course features grilled Texas bobwhite quail served over blue-cheese spelt risotto with buttered apple, basil oil, and Fredericksburg peach salsa. For the third course, Dady will serve a Lodge signature dish of wild boar ragù featuring fennel, onion, piquillo chiles, and whole plum tomatoes served over grilled sourdough toast and topped with a sunny-side-up quail egg.

Dady has invited 15 guests, friends, and family members from San Antonio to attend the Beard House event, but says he won't get to do a lot of tasting himself. "Unfortunately for me, most of the trip is going to be prepping and locating product - going to the bakery and the fish market," he says, adding that he is thrilled to be invited to the Beard House. "You name it, they've cooked there, so it's a pretty big honor."

Music and passion are always in fashion

The Majestic Restaurant & Club, 222 E. Houston, has reopened after a seven-year hiatus. Chef Roque Galvan's new menu includes Chicken Yaminini, grilled salmon, and herb-rubbed pork tenders with mushroom wine sauce. The club features a Las Vegas-style show with live dancing and music every Friday and Saturday night. Lunch is served 11 a.m.-2 p.m. Monday-Friday, and the restaurant reopens for dinner at 5:30 p.m. Monday-Saturday. For more information, contact owner Phil Yamin at 444-2582.
