Messina Hof Winery & Resort plans to launch its wine and vineyard industries mentoring program March 2.

Mentorees will have an opportunity to observe wine production, vineyard management, sales, and other aspects of the vineyard industry. Interested parties should submit a letter of interest specifying what aspect of the vineyard they’d like to mentor, with a resume to: Sue Stecher at stecher@messinahof.com or Messina Hof Winery & Resort, 4545 Old Reliance Road, Bryan, TX 77808.

Café Mariposa, 18322 Sonterra Place, is slated to open March 9. Chef-owner Brian West will be chanting his mantra — “Anything Latin is good” — as he delves into the heart of Latin American, Cuban, Mexican, and even Texas cuisine to create dishes as lovely as they are flavorful. Mojitos, sangrias, and watermelon martinis complement the restaurant’s array of tapas: Try the Smoked Duck Stuffed Peach with goat cheese and red pepper.

Less auspicious introductions this month include the Fatburger chain, which promises to satisfy “Texas-sized appetites.” Fatburger’s hefty 1/3-pound ground chuck can be adorned with your choice of cheese, bacon, egg, or chili. “Fatburger and Texas are a great match,” says Elaine Patel, Fatburger’s vice president of marketing, as the fourth fattest city chews its way back to number 1. Yeehaw.
