Careers as veterinarians in slaughterhouses and dairy farms meant a huge lifestyle change for Araceli Pelayo and husband Eduardo. Now vegan, they had to create recipes that could replicate the flavors they loved and are now sharing those dishes with San Antonio as the couple prepares to open the first vegan taco truck in the city.
Tapatio Vegan Taco, which started as a popup on January 6 at the Vegan Stop Shop, a monthly pop-up for all things vegan, will open April 16 at 4 p.m. at EZ Mart on 3818 Quiet Meadow. The menu will feature buy-one, get-one free (except for the jackfruit options) to celebrate.
Tapatio, in this case denotes their Guadalajara, Mexico origins and not the table hot sauce, serves items like wheat “meat” and jackfruit as meat substitutes. Pelayo says people often come back and ask her where she gets her meat.
Staples from the region like tortas ahogadas, sopes, and obviously tacos will be on the menu that also features gluten-free options. Everything is completely homemade from the breads and tortillas to the cheeses and “meats.” Pelayo offers a selection of vegan dairy products too. The cultured “cheese” and sour cream are made from cashews, their mozzarella is nut free and their butter is soy based.
