I often have grandiose plans of waking up early and beating the breakfast rush at Pancake Joe's. Well, that hardly ever happens, and I usually just end up eating breakfast tacos and wishing they were a giant omelet from Pancake Joe's instead.
My (and yes, your) chances of beating the rush and getting into PJs got a little better on Friday, August 12 as the Deco district fave opened a second, much larger location at 6703 Ingram Road.
Offering the same menu as the original spot, Pancake Joe's No. 2 seats 150 at 40 tables inside a former taqueria. The restaurant known for its casual atmosphere, waffles, scrambles and well, pancakes, is operated by chef-owner Jose Cruz.
